Lessons Learned

I’ve learned a valuable lesson this last week. If you do not stay right on top of tracking and reporting what you have eaten you tend to forget, then you slack off and tend to do what I call grazing. Yea that’s right! Grazing, just like a cow in the meadow: you eat a little here a little there and before you know it you ate as much as a cow and you feel like one too.
MOOO!


So I have to redouble my effort to stay on top of this reporting & self monitoring and keep out of the pasture.

Wednesday
Breakfast
1 cup Low Fat Granola
1 ½ cup Skim Milk

Lunch
2 cups Massaman Curry – Chicken
1 ½ cup Rice

Afternoon Snack
1 slice of German Chocolate Cake (2” wedge)
1 Roasted Chicken Wing

Dinner
Korean Food – Dol Sot Bibin Bop (1 cp rice, 4 oz grilled pork, ½ cp assorted veggies, 1 egg, Korean red pepper paste) all in a hot stone bowl.
1 Brownie (2x2)
16 oz Skim Milk

Thursday
Breakfast
1 Bagel w/ 3 oz Boiled Ham (1Tbs Miracle Whip, 1 Tbs Mustard)
3 cps Watermelon

Snack
2 slices American Cheese
4 oz Luncheon Loaf (bologna)

Lunch
6 oz Grilled Salmon
1 Roasted Chicken Breast
1 Roast Chicken Wing

Snack
1 slice German Chocolate Cake (1” wedge)

Dinner
Korean Food – Dol Sot Bibin Bop (1 cp rice, 4 oz grilled pork, ½ cp assorted veggies, 1 egg, Korean red pepper paste) all in a hot stone bowl. (I love this stuff!!)

This is in a very hot stone bowl and you mix in the egg with the rest of the stuff and it makes the rice underneath the veggies really creamy and the heat and steam from the stone pot cooks the egg. Great stuff menard! Oh yea not much exercise or television watching this week either.

Friday & Saturday is a little late but her it is:

No Thursday – I was just to busy but I’m going to try and not skip another day.
Friday I had the same thing for breakfast that I always have and here is the rest of Friday.

Breakfast
6 oz. Low fat Yogurt
1/ 2 cp Low Fat Granola

Lunch
2 ½ cps Spaghetti and Meatballs
2 cps garden Salad w/ 2 Tbs Blue Cheese Dressing

Afternoon Meal
1 Marie Calendars Beef pot pie

Dinner was Korean Food
Dal sot bib in bob
It has 1 cp rice, 3 oz Seasoned pork, assorted vegetables and an egg. You mix it all up with some hot pepper sauce and it is delicious (one of my favorite Korean dishes) after this I had a 3” slice of apple pie with a 16 oz glass of milk and was set for the night.

On Saturday I got up earlier with my son David and had the almost usual 6 oz. low fat yogurt
¾ cup skim milk. The rest of the day was as follows:

Mid Morning
2 Breakfast burritos ( each consisted of 1 ½ eggs, 1 slice American cheese, 2 oz ham, and an 8” tortilla) w/ ¼ salsa.

Lunch
½ Marie Calendars Beef Pot Pie – I shared with David
1 3” Slice of Apple pie

Dinner
12 oz can Red Cream Soda
2 cps Cherries
Cincinnati Chili – 3 ways - Includes the following:
- 2 ½ cps Spaghetti Noodles
- 1 ½ cps Cincinnati Chili
- ½ cp grated cheddar cheese

Cincinnati chili is excellent and it is probably new to most people unless you have had occasion to be in the Cincinnati area and had it at one of the many places that serve it there. I myself have not had this in at least 10 years but I decided to make it for dinner Saturday – Misun liked it. See the pictures, recipe below.



Cincinnati Chili Recipe
List of Ingredients

2 ½ lbs. lean ground beef
4 c. water
2 - 6 oz. cans tomato paste
1 large onion - finely chopped
2 clove garlic - minced
2 large bay leaves
3 Tbs. chili powder
1 Tbs. ground cumin
2 tsp. ground allspice
1 1/2 tsp. cinnamon
1 tsp ground cloves
1 tsp. salt
1 tsp. Black Pepper
1 tsp. red pepper powder
1 tsp. white wine vinegar
1 tsp. Worcestershire sauce

hot cooked spaghetti
finely shredded cheddar
chopped onion
small red beans

Instructions

1. Combine ground beef and water in a stew pot. Bring to boil then simmer about 20 minutes until beef is done, stirring occasionally to so that beef is a fine crumble as it cooks (You want very fine particles of beef).
2. Stir in everything but the last 4 ingredients (spaghetti, cheese, onion, beans) Cover and cook, at a simmer for about 1 1/2 hour stirring on occasion. Remove cover and, if necessary, cook down to a good thick consistency.
3. Remove and discard bay leaves.
4. Layer on plate: spaghetti, beans, chili, onions and then a blanket of cheese to cover entire thing. The beans cheese and onions are optional, I like my chili 4 ways which means with cheese and onions but no beans.


Serves 6 - 8

I did not do any extra exercise Friday or Saturday I did watch about 3 hours of television on Saturday.

Wednesday

Wednesday is a little late but her it is:

Breakfast
6 oz. Low fat Yogurt
½ cup Low fat Granola

Mid-morning Snack
½ cup Dry Roasted Almonds
1 Med. Banana

Lunch
Roast Beef Sandwich
- 6 oz Roast Beef
- 2 slices American Cheese
- 8” Hoagie Roll


Dinner
Korean Food – which consisted of pieces of grilled pork with an onion type salad and red pepper & bean paste mixture, all wrapped in a lettuce leaf. (No rice because Misun forgot to cook it. Imagine that a Korean forgetting to cook rice.) See the picture, oh and this is on a small plate.


I ate 6 of these lettuce wraps which consisted of atotal of approximately:
9 oz pork (marinated in rice wine vinegar salt & pepper)
6 pcs Lettuce
1 ½ cup onion salad (red, yellow & green onion cut into long strips then mixed w/ red pepper powder, rice wine vinegar & a little sesame oil)
½ Cucumber
6 Tbs of the red pepper & bean paste mixture.
16 oz Skim Milk

Evening Snack
16 oz Skim Milk
4 slices of Banana Bread ( 2x3x1)

I did not do any extra exercise Wednesday, nor did I watch any television.

Outraged & Sickened to My Very Core

I AM OUTRAGED!! And I’m also sick to my very core at the news from Albuquerque NM. The mother of a 3 year old child found buried in the sand at a local playground last Friday admitted to killing her son. She said she suffocated him once, changed her mind and preformed CPR to bring him back to life, then suffocated him again. This makes me weep.

Murder is wrong in all instances, but how can someone kill an innocent child, especially their own child. This makes me so outraged! And really PISSED OFF I have no compassion for these people. The death penalty would be to good for this woman (she is no mother), she should be sentenced to a maximum security prison where she can sit and rot away for the next 50 to 60 years well thinking of the innocent life she so carelessly took.

Where were the adults who had some responsibility for this child? The woman was kicked out of her mothers home on May 7, 2009 because of the way she treated the child was kicked out of a friend’s home a couple of days later because of how she was treating her child. Why did these people not call NM Child Protective Services and have the child put in a safer environment???

You know we have no law regarding a persons general duty to help in the United States but we should have a laws regarding a persons duty to help in the cases of children who may be in danger. These adults kicked the woman out with little or no regard to what was going to happen to the child. They knew the child was in danger because they kicked out the woman because of the way she was treating the child, but yet they had little regard for the child as evidenced by their failure to take any action to protect the child in any way. They should also be held accountable for this child’s death and charged under the child negligence statutes of NM law. I just hope the Prosecutors have enough gravitas to do it.

Tuesday was Tuesday.

It was a little crazy Tuesday, I was so hungry by mid morning that I ate my lunch for my normal midmorning snack and then ate my snack for lunch later, hence the change in position on the list.

Around 3:00 pm my Misun (wife) called and said my 6 month old son who has been running a fever the last couple of days was getting worse and that she had called the doctor’s office. Then about 4:30 pm she called and said the doctor wanted her to bring Big “R” (our 6 mo. son) into the office so that they could look at him so she picked me up from work early and we went to the doctors office where we learned the Big R had a bad ear infection and the doctor prescribed some antibiotics for it.

We also learned something else well at the doctors office, that our 2 ½ year old son David MunYung knows how to pray. Well in the examining room waiting for the doctor we heard David saying, “Heavenly Father please help Joseph (aka Big R). I love Jesus Christ he is my brother” and when we turned around David was kneeling down with his arms folded and head bowed.

Well after the doctor's office, it was off to the pharmacy for the 1 ½ hour wait for the prescription to get filled. Does anybody know why this process takes so long? Is it just a standard so that they make you wait in hopes that you will wonder and buy more crap from the store that you do not need? I think the later. As I have had to wait more than an hour recently when trying to fill a prescription at midnight for my son David, and no one else was even in the store.

Well by the time we got out of the store and home I was staving and Misun was tired so as you can see we did not have a great dinner it was kind of quick hot dog fridge find dinner.

Well her it is:

Breakfast

Lunch
2 cups Spaghetti & Meatballs
2 cups Dinner Salad ( Lettuce, Tomato, Cucumber)
2 oz Light Raspberry Vinaigrette Salad Dressing

Mid-morning Snack
½ cup Dry Roasted Almonds
1 small Banana

Dinner
6oz Pickle and Pimento Loaf (Bologna)
2 ½ Hot Dogs w/ Bun, Mustard & Ketchup
2 pcs American Cheese
2 ½ cups of Curly Q Fries ( Soggy - I do not recommend these, do not buy them from the store)
16 oz Skim Milk


I did not do any extra exercise Tuesday, but I did walk a littl more than normal when we took Big R to the doctor, and I did not watch any television. But he traffic on the way to work was light that day.

1- 15 oz. can Chef Boyardee Beef Ravioli

Dinner
2 cups Dinner Salad ( Lettuce, Tomato, Cucumber)
2 oz Light Balsamic Vinaigrette Salad Dressing
3 cups Spaghetti & Meatballs
1 pcs Garlic Bread ( 2”x4”)

Evening Snack
21 oz Glass of Chocolate Milk

I did not do any extra exercise Monday, nor did I watch any television.
I just played with my sons. Oh yes I can here it now, 3 Cups! Well I did not eat four, and how many did you eat today?

A Quick Introduction

This Blog is my side of things - a journal of my story, my thoughts, my actions. Speaking simply it is a fat man’s journey.

A friend called this morning, he mentioned he was needing to lose some weight and felt it would help him if he was accountable to someone. He asked if I was interested in doing some sort of reporting to each other, on a weekly basis, of what we are doing and how our attempts to lose weight are going. I told him it sounded good to me and we agreed to report to each other by email every week. Well, after a little more thought on the subject this blog was born and I’m going to report through this blog on my daily journey. Yes, it will have other things that’s of interest to me as well, but it will contain my daily journey to lose weight. Both its failures and successes.

Who knows, maybe this blog may also answer so many people’s questions I know they want to ask, but are either to polite or afraid to ask. I wonder if people will stop staring at me and go about their business. Just a thought.
