The Week in Review

Oh what a week. For the most part it was your typical week, except for a few occasions where I went for fast food. On Monday, Tuesday and Wednesday I did go to Burger King and get a BK Double Stack, no fries or soda as I really do not care for them plus I can not afford them. I do like the BK Double Stack though, it is basically a double cheeseburger with bacon and it is tasty.


Just an FYI - I dramatically reduced my fast food consumption about 6 months ago and rarely do I eat fast food anymore as we are trying to save money PLUS I need to be “not so fat” as some would say. But this week “The King” was calling and I fell for his lure.

I wonder how many people would eat fast food if there was no drive-thru window. Or in other words, how big is the convenience factor in fast food sales? Just thought I would put that out there.


I/We (the family) have been eating a lot of fresh fruit and vegetables lately and I have been eating my banana a day also. One of our friends gave us a bunch of egg plants, squash and huge Armenian cucumbers out of their garden a week ago. They are delicious. We have been grilling the eggplant and making different variations of a Mediterranean salad with them. Sometimes adding fresh diced tomatoes, feta cheese and balsamic vinegar, or roasted red peppers and feta cheese. Misun is going to make a version of a Korean hot pot dish tonight with eggplant and diced chicken, she cooks it in the wok instead of the stone pot though, it’s good.

I did get a fair workout, for me at least, on Saturday. We went to Lowes and cruised the isles getting things to complete little jobs around the house. The main job was replacing the ceiling fan in our kids bedroom. Although the fan worked, it hasn’t had a working light on it since we moved into the house over three years ago. We just used lamps in the room. But since Misun’s 13 year old niece from Korea is coming to stay with us on July 6 for six weeks we wanted to make it a little nicer for her. The fan was BUT ugly (someone did a custom paint job on it before we moved in) and without a working light so we decided to replace it. These normally little tasks like replacing a ceiling fan can give you a good work out when you are 250 lbs overweight. And we are going to have to do a few more repairs next weekend also.

Anyway here is the food journal for Saturday and Sunday.

Sunday
Breakfast
4 Small slices of homemade bread
2 eggs – sunny side up
2 slices American Cheese
1 Tomato – fresh from the garden.

Lunch
3 hot dogs with 1 cup of Cincinnati chili and ¼ cup shredded cheddar cheese
1 banana

Dinner
Korean Food – Dol Sot Bibin Bop (1 cp rice, 4 oz grilled pork, ½ cp assorted veggies, 1 egg, Korean red pepper paste) all in a hot stone bowl.
2 Brownies w/ walnuts (2x2)
16 oz Skim Milk

Saturday
Breakfast
3 small slices of homemade bread
2 eggs – sunny side up
2 cups sautéed fresh Summer squash

Lunch
2 Hot dogs w/ 1 cup Cincinnati chili
3 cups watermelon

Snack
3 cups Armenian cucumber slices w/ ¼ cup blue cheese salad dressing dip
1 banana

Dinner
2 grilled pork chops (4 or 5 oz each)
1 ½ cup grilled eggplant salad (eggplant, roasted red peppers, feta cheese)
